Tuesday, April 8: Spring Easter Celebration at Parkersburg High School
- Enjoy performances by Acappella Choir, PHS Brass Ensemble, and more.
- Special appearances by the Chick-fil-A Cow, Texas Roadhouse Armadillo, and the Easter Bunny.
- Annual Egg Hunt sponsored by Elks Lodge #198, featuring 4,000 filled eggs and two free children’s bicycles.
Wednesday, April 9: Egg Hunt at Parkersburg South High School
- Over 6,000 eggs and free bikes for children.
- Enjoy performances by the South Band and Choir.
- Festivities begin at 5 p.m.; the egg hunt starts at 6 p.m.
Saturday, April 12: Easter Parade in Downtown Parkersburg
- The parade kicks off at 2 p.m.
- Enter a decorated float, truck, or car for a chance to win beautiful plaques for first, second, and third place.
Family Favorite Recipes
Fantastic Potato Salad
Ingredients:
- 12 medium white potatoes
- 2 tbsp cider vinegar
- 2 tbsp melted margarine
- 2 tbsp sugar
- 2 tsp salt
- 1 bunch celery, chopped
- 12 hard-boiled eggs, sliced
- 1 cup minced parsley
- 2 (4 oz) jars chopped pimentos
- ½ cup minced onion
- 1 (10 oz) jar sweet pickle relish
Instructions:
- Boil potatoes with skins until tender. Peel, cube, and toss with vinegar, margarine, sugar, and salt while hot.
- Refrigerate until chilled, then add celery, eggs, parsley, pimento, onion, and relish.
- Chill again to let flavors blend. Moisten with Mayonnaise-Horseradish Sauce before serving.
Mayonnaise-Horseradish Sauce
Ingredients:
- 1 quart Hellmann’s mayonnaise
- 1 (5 oz) jar prepared horseradish
Instructions:
- Mix well and refrigerate.
- Also great with roast beef or corned beef.
Avocado and Bacon Salad
Ingredients:
- Juice of 2 limes
- ¼ cup olive oil
- ½ cup sour cream
- ¼ cup mayonnaise
- Salt and coarsely ground pepper
- 2 cloves garlic, minced
- 8 strips bacon, diced
- 1 large head Boston lettuce, washed and broken into pieces
- 2 small avocados, cubed
Instructions:
- Combine lime juice, olive oil, sour cream, mayonnaise, salt, pepper, and garlic.
- Cook bacon until crisp, then drain.
- Just before serving, toss lettuce, avocado, and bacon with dressing.
- Serve on crisp greens.
